Use a paper or cloth towel to rub a thin layer of a high-heat vegetable oil (such as canola or avocado) all over the surface (interior and exterior). You don’t need much — just a thin layer. Place pan upside down on a center rack and bake for 1 hour. Then turn off the oven but leave your cast iron inside the oven to cool for 1 hour.
Heat oven to 500 degrees. Using paper towels, rub 1 tablespoon (for 12-inch skillet) or 2 teaspoons (for 10-inch skillet) oil over surface. Using clean paper towels, thoroughly wipe out excess oil (surface should look dark and smooth). Place skillet in oven for 1 hour. Using potholders, remove skillet from oven and let cool completely.STEP 2. If the skillet has a thick layer of rust and very little visible black iron, soak the pan in a 50/50 solution of white vinegar and water in a plugged sink. Let it sit for at least an hour
